Easy Apple Cake

Hmmm….what to make when your family is craving something sweet. Make an apple cake! This super easy vegan treat can be served warm or cold. It also can be made with gluten free flour if you have additional allergies in your household with the same results. Let’s get started.
You will need the following ingredients:
- 2 Apples, peeled, cored and thinly sliced
- 1TBSP Lemon Juice
- 1 1/2 C Flour
- 3/4 C Sugar
- 3/4 tsp Baking Soda
- 1/4 tsp All-Spice
- 1 tsp Cinnamon
- 1/2 C Canola Oil
- 1/4 C Water
- 2 tsp Vanilla Extract
- 1 Tbsp Apple Cider Vinegar
- Cinnamon Sugar for Serving
Preheat oven to 350. lightly grease a tart pan and line with parchment paper. Peel, core and slice the apples. Place apples in a bowl and combine with the lemon juice.
Combine the oil, water, vanilla and apple cider vinegar in a measuring cup. In a separate bowl combine flour, sugar, baking soda and all spice.
Place your apples in layers on the parchment paper in the tart pan. Have fun and create a design since you will flip this onto a serving plate.
Mix oil and water mixture with the flour mixture until combined. Drop the mixture over the apples and spread evenly with a spatula or your fingers. Place the cake in the oven on the center rack and bake for approximately 40 minutes or until the cake is lightly browned on top.
Remove from the oven and cool for 20 minutes. Serve from the tart pan warm or turn the cake over onto a serving plate to show off your apples 🙂
