Forest Haven Mom Waffles

I have been making this waffle recipe for years! They have become a Sunday brunch tradition at our house. We also make them for Brinner (breakfast for dinner) My family loves them so much they bought me a 4-square waffle maker after my single round waffle maker stopped working. I like the larger cooking area, and it dramatically cuts the time it takes to make the recipe. I absolutely love that this recipe is flexible, and you can modify it based on the ingredients you have on hand. These waffles also get bonus stars for freezing well. Simply put them in an airtight container separated with parchment paper and put them in the freezer. Reheat in the toaster or microwave and top with fruit and you have a quick breakfast for the school week.

Equipment

Ingredients
  

  • 2 cups Flour
  • ¼ cup Sugar
  • tsp Baking powder
  • ½ tsp Baking soda
  • 3 tbsp Unsalted butter, melted
  • 1 cup Whole milk yogurt Use a full fat or 2% plain or vanilla yogurt. I primarily use vanilla whole milk yogurt or full fat Greek yogurt if you want less sugar in the recipe.
  • cup Whole milk or Buttermilk
  • 2 large Eggs
  • 2 tsp Pure vanilla extract

Instructions
 

  • In a large mixing bowl, combine the flour, sugar, baking powder and baking soda.
  • Melt the butter in a small dish and set aside.
  • In a small mixing bowl or 4 cup measuring cup combine the yogurt, milk, eggs and vanilla.
  • Add the yogurt mixture to the flour mixture and combine until the ingredients are incorporated. Next, fold in the melted butter.
  • Program your waffle maker to the buttermilk, light (2 dash) setting and preheat.
  • Pour the batter into your waffle maker and be careful not to overfill the waffle grids. Cook the waffles until they are crisp to your liking. Serve or keep them uncovered in a warm oven or warming drawer.
  • Serve with maple syrup, berries, whipped cream. Enjoy!
